CUISINIER DE FRANCE, Chef
DANIEL DURAND, a member of the FRENCH CULINARY ACADEMY
whose flair for the delicious is well known to friends
and admirers in the United States and abroad.
The one time Chef to the Duke of Bedford,
Durand is a
classically trained French chef who has had successful
restaurants in London and San Francisco as well as
an illustrious career directing the food operations
for major cruise lines and catering organizations.
It was Durand who first brought Paul Bocuse onboard
the Royal Viking Sun, introducing today's cruise-goers
to the glories of fine cuisine. And, it is Durand
who is now importing some remarkable products from
France to America.
As executive director of the Chefs
in America Foundation, DANIEL DURAND became a
good friend with virtually all the marquee talents
in fine dining today. In cities from coast-to-coast,
he has worked along side colleagues responsible for
forging new methods of showcasing today's most appealing
flavors and foods.
Now he's working with a new generation of chefs who
are rapidly expanding the chef's lexicon to introduce
New World flavors and lighter, more aromatic dishes.
He takes particular pride in contributing
his talents to help professional learning institutions
teach the newest techniques. He has taught at
the California Culinary Academy and raised significant
funds for scholarships at Johnson & Wales University.
Through his efforts, new chefs have
learned ways to use modern products to assist them
in creating outstanding dishes.
